Do you love a good cheesy enchilada? We do. Here at Real. Fun. Family. enchilada night is always a well-attended family dinner. Years ago we started out with traditional enchiladas, rolled and doused in sauce and cheese. At some point, Mark, aka Big Dad, twisted the recipe up, kind of a mash-up between lasagna and Mexican food, and the cheesy enchilada casserole was born.

This one is so simple, even a kid could make it (hint hint.) The key is in the ratio of filling to sauce. You don’t want too much sauce. When you get it right it’s downright yummy!

I’ve made a printable recipe for you on this one because I don’t have the fancy recipe doohicky. Don’t forget to PIN this bad boy too so you’ll always have it.

Here goes.

The ingredients you need are simple:

4-5 Chicken thighs (BBQ-ed) or 1 lb of ground beef or turkey

1 large can of red enchilada sauce

1 15 oz. can of black beans (drained)

1 15 oz. can of corn (drained)

1 10 oz. can of Ro-Tel diced tomatoes with chilis (not drained)

1 package of corn tortillas

Shredded cheese, your choice

Directions:

Heat oven to 350.

BBQ the chicken thighs.

When the chicken is ready, cut it into small pieces and add it to a bowl.

Dump in the beans, half of the can of corn, and the diced tomatoes.

Mix well.

Spray a casserole dish with cooking spray. 9×13 works well.

Add 1 cup of enchilada sauce to the bottom of the dish.

Tear 2-3 corn tortillas into strips and place them over the sauce.

Pour half of your bean/meat mixture over the tortillas.

Cover with shredded cheese.

Add 1 more cup of sauce over the cheese.

Add another layer of torn tortillas

Pour the rest of the bean/meat mixture over the tortillas.

Cover with shredded cheese.

Add 1/2 cup of sauce over cheese.

Add another layer of torn tortillas.

Add the rest of the enchilada sauce over the top.

Cover with cheese.

Bake uncovered in the oven for 25 minutes.

Top with your favorites like sour cream and salsa.

I hate scrolling through recipes but if you’ve made it this far I do have a couple of suggestions.

1. Marinate your chicken before you cook it. Our favorite marinade for this recipe is orange juice and Weber’s Kickin’ Chicken. It’s our rub of choice for almost everything we BBQ.

2. Add your own flair to this casserole with things like black olives, onions, or extra chilies. Go ahead and make it your own!

3. Be prepared for this one to fly out of the dish. We have a family of four and rarely have any leftovers when I make this casserole. My youngest loves it cold so if there are any leftovers they usually only last through breakfast the following day.

4. This is the perfect dish to make for dinner guests. It’s fast, easy, and everyone loves it. When we can be together again, invite the neighbors or your pastor over and dig in. It’s sure to be a hit.
